The problem is the chicks, not the eggs
Laying breeds of chicken have been bred for one job: eggs, not meat. A male chick from a laying line grows slowly and puts on little breast meat, so hatcheries have no commercial use for him. Because sex can’t be reliably told from the outside of an egg or a day-old chick without specialized equipment, every hatched male in a conventional layer hatchery is sorted out within hours of hatching and killed. Faunalytics, an animal-research nonprofit, put the 2024 global figure at roughly 7.8 billion male chicks a year, with about 70% of that volume in Asia, where sexing technology has barely arrived. Older estimates cited by industry and welfare groups alike cluster around 6 to 7 billion, and the range reflects genuine uncertainty in flock data, not a wildly different reality: this is a routine, industrial-scale practice, not a rare defect in the system.
The two methods in use are maceration, in which chicks are fed into a high-speed grinder, and gassing, usually with carbon dioxide, in enclosed bins or chambers. Both are treated by veterinary and welfare bodies as an acceptable form of culling because they’re fast, but neither pretends to be anything other than killing healthy, day-old animals for a trait, sex, that a laying operation has no use for. The practice is legal almost everywhere eggs are farmed at scale, and it isn’t hidden from the industry itself: it shows up in hatchery manuals and veterinary guidance as a standard operating step, not an aberration a bad actor introduced.
What's actually changing: in-ovo sexing
This is the part of the picture that moves fastest, and it’s worth stating plainly: it is no longer true that nothing is being done. In-ovo sexing determines a chick’s sex before hatching, using methods like hyperspectral imaging of the egg, endocrine assays that test a droplet of allantoic fluid for estrogen markers, or DNA sampling, so male eggs can be removed and diverted (typically to animal feed) days before a chick would otherwise hatch and be culled.
Germany banned chick culling outright from January 1, 2022, the first country to do so, and requires hatcheries supplying its market to sex eggs in-ovo instead. France followed the same year with a ban plus a requirement that hatcheries install sexing equipment, backed by about €10 million in public funding to help hatcheries buy the machines, according to reporting at the time. Austria has a similar rule with narrow exceptions, and Italy’s ban is set to take effect in 2026 or 2027 depending on the source. Two commercial systems now do most of the EU’s in-ovo sexing: Seleggt, developed with the retailer REWE and sold under the Respeggt brand since a 2018 Berlin launch, which uses the endocrine assay method, and rival hyperspectral-imaging systems from companies including In Ovo. Innovate Animal Ag, a group that tracks the technology's rollout, estimated that 40% of the EU's roughly 340 million laying hens were sexed in-ovo by the start of June 2026, up 6 percentage points in a year, with new sexing circuits (In Ovo's in Poppel, Belgium; Respeggt's in Ankum, Germany) adding capacity through 2025 and 2026.
The United States has no federal ban and no mandate. Adoption there has been voluntary and slow: as of 2025, only a couple of large hatcheries had bought in-ovo sexing equipment, led by egg brands NestFresh and Kipster, and the first in-ovo-sexed US eggs only reached stores that year. If US hatcheries adopted the technology at the rate Europe has, one industry estimate puts the number of male chicks it could spare at around 350 million a year, but there’s currently no regulatory pressure forcing that pace.
What happens when a hen stops laying well
A hen who survives hatching lays at a commercially useful rate for roughly 72 to 80 weeks, after which egg output drops enough that she’s classed as “spent” and sent to slaughter, typically for low-value meat like pet food, stock or processed products. That’s a slaughter age of about 18 to 24 months. Left alone, a chicken can live 6 to 8 years, and well-documented individual hens have reached into their teens. The gap between those two numbers, not the existence of an egg, is the second pillar of the vegan objection: an egg-laying life is a short one by design, timed to the point where the bird’s output no longer clears the cost of feeding her. Some producers extend that window with “forced molting,” resetting a flock's laying cycle, historically by withdrawing feed for a week or two, to get a second productive cycle out of the same birds before slaughter. The EU has banned feed-withdrawal molting outright; the US permits molting through diet changes instead, and United Egg Producers guidelines still allow it even though the group discourages full feed withdrawal. Either way, molting delays the slaughter date. It doesn't change the destination.
What cage-free, free-range and pasture-raised actually guarantee
US carton labels are regulated unevenly. The USDA defines cage-free as hens housed in a building or enclosed area with unlimited food and water access and room to roam within it, which can mean a crowded multi-tier aviary as easily as an open barn. Free-range under USDA rules adds a requirement for outdoor access, but the agency sets no minimum on how much space, how long the access lasts each day, or what that outdoor area has to look like, so it can be a small concrete yard reachable through one hatch. Pasture-raised has no federal definition at all in the US; it’s a marketing term unless it’s paired with a third-party welfare certification that defines it. The EU's marketing standards are more specific for eggs sold as “free range” there, setting a stocking density and outdoor space requirement, but none of these labels, in either market, says anything about male chick culling or end-of-lay slaughter age. A carton can be cage-free, free-range or organic and still come from hatchery stock where the males were culled and the hens were sent to slaughter at 18 months.

Bred to lay: selective breeding and bone health
A wild jungle fowl, the chicken’s ancestor, lays around 10 to 15 eggs a year. Commercial laying breeds have been selected for a rate closer to 300, which means a hen’s body is pulling calcium for eggshell production far beyond what her skeleton can spare from diet alone; the shortfall is drawn from her bones. Researchers studying this link it directly to osteoporosis and to keel bone fractures, breaks in the blade-like bone that runs down a bird’s breastbone. Peer-reviewed surveys have found fracture prevalence by end of lay ranging from 53% to 100% depending on housing system and country, with figures as high as 86% in the UK and 97% in Belgium reported in commercial flocks. Selective breeding for productivity is implicated directly: experimental lines bred without a productivity target for several generations showed markedly fewer fractures than commercial high-yield lines in comparative studies. The honest hard case: backyard and rescued hens
This is where the vegan position on eggs gets genuinely contested, including among vegans, and it deserves a straight answer rather than a dodge. The strongest version of the pro-backyard-egg argument goes like this: a hen who already exists, is already being fed and housed, and is going to lay an egg roughly once a day whether or not anyone eats it, isn’t harmed by that egg being collected and eaten. No animal is killed or confined for that specific egg. On that logic, eating eggs from a hen you already keep, especially a rescued one, looks different in kind from buying a carton that funds a hatchery.
The counterargument runs on two tracks. First, sourcing: most backyard flocks, including many started with good intentions, are mail-ordered as day-old chicks from the same hatcheries that supply commercial egg farms, which means every male sibling of that backyard flock’s hens was very likely culled to produce them. Second, a philosophical objection some vegans hold regardless of sourcing: that an egg is the hen’s reproductive output, not a byproduct free for the taking, and that taking it treats her as a resource rather than leaving her be, whatever the practical harm calculus says.
Vegan organizations and communities don’t land in one place on this. Some vegan advocacy groups argue eating eggs from any hen, rescued or not, undercuts the message that animals aren’t property to use; others, including hen-rescue charities themselves, encourage adopters to eat or share the eggs their rescued hens lay rather than waste them, and plenty of vegans quietly do exactly that with their own backyard flocks while avoiding hatchery-sourced or store eggs entirely. If you keep rescued hens and eat their eggs, that is a defensible, widely held position within the vegan movement. It is also a different claim from “eggs are vegan,” because it depends entirely on the hen’s history, not on eggs as a category.
