Why vegans don't drink milk: the calving cycle behind every carton

A cow makes milk for the same reason any mammal does: because she has just given birth, and that single fact sets the shape of the whole dairy industry.

The mechanism: no birth, no milk

A cow, like any mammal, produces milk to feed a calf. She does not produce it on standing offer. To keep a dairy herd in milk, every cow in it has to be got pregnant, carry a calf to term, give birth and then be milked instead of, or alongside, nursing that calf. The commercial cycle runs on roughly a yearly clock: get the cow back in calf within a few months of her last birth, milk her through most of the following pregnancy, dry her off shortly before the next calving, and repeat. That cycle, not any single practice within it, is the fact most people asking about dairy have never had explained to them.

Artificial insemination is the dominant breeding method on US dairy farms: USDA's National Animal Health Monitoring System survey found 89.3% of dairy operations used AI in 2014, with natural service more common on smaller or grazing operations. Artificial insemination has been standard practice in commercial dairy since well before the modern era of the industry; it lets a farm use a handful of genetically superior bulls across thousands of cows rather than keeping a bull on site, and it is what makes precise breeding decisions, including the choice of sexed semen, possible at all.

Sexed semen, which skews the calf crop toward females, has been adopted much faster in virgin heifers than in lactating cows: a widely cited study of US breeding records found sexed semen used in 17.8% of heifer breedings by 2008 versus 0.4% of cow breedings, largely because sexed semen carries lower conception rates in already-lactating animals. Wider sexed-semen use is one of the main routes being tried to reduce the number of male dairy calves born in the first place, alongside beef-on-dairy crossbreeding, where a dairy cow is deliberately bred to a beef bull instead of a dairy bull to produce a calf with more market value as beef. Both are adjustments to the supply of unwanted male calves. Neither changes the requirement that the cow herself must calve on a roughly annual cycle to keep producing milk.

Calf separation and the cow-calf bond

Standard practice on most US and UK dairy farms is to remove the calf from the cow within 24 hours of birth, most often within a few hours, primarily to control disease transmission and manage colostrum feeding precisely. The RSPCA Knowledgebase and multiple peer-reviewed studies describe this as the industry norm rather than an exception.

The research on timing is counterintuitive: separating a calf later does not reduce distress, it increases it. A series of studies on early separation (published in Applied Animal Behaviour Science) found that when cows and calves were kept together for a day, four days or a week before separation, the calling and pacing response on separation was more intense and lasted longer the longer the pair had been together, because the bond has more time to form. Cows and calves can begin to bond within about five minutes of contact after birth. That is the scientific basis the industry itself gives for early separation: it does not eliminate the underlying cost, it front-loads it before the bond deepens. A smaller but growing cow-calf contact movement, mostly in Europe, keeps pairs together for days or weeks and reports calmer weaning behaviour and more sociable adult cows, at the cost of lower marketable milk per cow.

What happens to the male calves

A dairy herd needs replacement heifers, not bull calves. Roughly half of every calf crop is male, and a male calf from a dairy cow is not built for beef the way a beef breed is: dairy breeds like Holstein carry less muscle per pound of feed. Three markets absorb him, depending on country and price.

Ireland's spring calving season alone produces roughly 1.5 million calves, about half of them male; trade reporting on the 2020s calving seasons put close to 200,000 Irish male dairy calves a year exported live to continental Europe for veal, with the rest split between dairy-beef rearing and euthanasia. In the UK, the AHDB has put on-farm euthanasia at around 60,000 dairy bull calves a year, about 15% of the bull calves born, before Red Tractor's farm-assurance standard banned routine calf euthanasia from the end of 2021 for its certified members. The ban does not cover every UK dairy farm, and enforcement relies on Red Tractor's own auditing, but it marked the UK's dairy sector publicly conceding the practice was hard to defend.

Live export adds a further welfare question to the Irish and EU picture specifically. Calves shipped from Ireland to continental veal producers travel by truck and ferry, sometimes for well over 24 hours door to door, at an age when they are still nutritionally and physically fragile. Irish and EU reporting from the early 2020s repeatedly flagged the length of these journeys as a welfare concern distinct from the veal system itself, and it is one reason some retailers and campaign groups have pushed for the calves to be reared closer to where they are born rather than shipped as young stock.

The cow's own lifespan

A dairy cow's biological lifespan can run to 20 years. Her working life is much shorter. US industry data put the average productive lifespan of a dairy cow at around 2.8 lactations, which works out to roughly three to four years of actual milking after her first calving at about two years old, for a total lifespan closer to five or six years before culling. Cows are culled mainly for infertility, chronic lameness, low yield or mastitis that no longer responds to treatment, not for old age.

That culled dairy cow does not exit the food system. Analysis of US beef sourcing puts cull dairy cows at around 7% of the US beef supply, usually as ground beef rather than steak cuts; counting finished dairy steers and dairy-cross heifers alongside the culled cows, the dairy sector as a whole has supplied roughly a fifth of US beef in recent years. The same is true in the UK and EU, where cull dairy cows are a standard part of the beef supply chain rather than a separate byproduct market.

The yield trend and what it costs the cow

US milk yield per cow has climbed from about 5,314 pounds a year in 1950 to 24,390 pounds in 2025, according to USDA NASS's final 2025 report, a roughly 4.5-fold increase. Genetic selection accounts for more than half of that gain: milk yield in Holsteins is a moderately heritable trait, and decades of selecting sires for their daughters' milk output has compounded the effect generation over generation, on top of gains from nutrition and housing.

That output has a metabolic price. A cow producing well over 20,000 pounds of milk a year is running a sustained caloric and mineral drain that raises her risk of the two conditions welfare scientists treat as the standard measures of dairy cow welfare: mastitis, an udder infection, and lameness, most often from claw lesions linked to standing on hard flooring and to the metabolic stress of high production. A frequently cited US estimate puts clinical mastitis at around 25% of cows per herd per year. Global lameness studies put average prevalence around 22 to 23% of cows scored at any one time, with EFSA's Animal Health and Welfare Panel treating any herd above 10% lameness as evidence of an inadequate prevention program.

It is not one system

Dairy farming is not uniform, and treating it as one global practice overstates the case in some places and understates it in others. New Zealand and Ireland run largely pasture-based, seasonal-calving systems where cows graze most of the year; peer-reviewed comparisons find pasture-based herds have lower rates of mastitis, lameness and early cow mortality than confined herds, though higher rates of parasites and nutritional stress from weather-dependent grazing. US dairying is overwhelmingly confinement-based, in freestall or drylot systems, with cows housed year-round and fed a mixed ration; EU and UK systems sit between the two, with welfare rules set at the EU or national level going further in some areas, such as banning routine tail docking, than US federal law, which has no comparable dairy welfare statute at all. None of these differences change the underlying calving-and-separation cycle. They change how much additional welfare load a given system stacks on top of it.

Can vegans drink milk if the cow isn't killed?

No, because slaughter is only part of the objection. A cow only lactates after giving birth, and that birth produces a calf who is separated from her, usually within a day, and then raised for the dairy herd, for beef, or in some markets culled shortly after birth. Milking without any of that upstream cycle is not how commercial dairy operates.

Why do vegans not drink milk but some vegetarians do?

Vegetarians typically object to killing an animal for food but not to using an animal's products, so milk and eggs stay on the table. Vegans extend the objection to the underlying practices needed to produce those products, including repeat pregnancy, calf separation and the eventual culling of the cow and most of her male calves.

What happens to male calves born on dairy farms?

Roughly half of all calves born to dairy cows are male, and dairy breeds are not efficient beef animals, so male calves are raised for veal, crossbred with a beef sire and raised for beef, or in some markets killed on-farm shortly after birth.
