The rule: read the first two ingredients
Vegan cheese formulas change every year and brands reformulate without warning, so a review of one product ages fast. The ingredient list does not. Look at whatever comes right after water on the label, because that tells you which of three families you are holding, and each family melts in its own way.
Refined coconut oil paired with a modified starch (potato starch, tapioca starch, or a food starch labeled “modified”) predicts a good melt with real stretch. This is the Violife family: coconut oil made up about 24 percent of the brand's own Original Grated formula, sitting alongside modified tapioca and potato starch, according to Violife's published ingredient list.
A cashew or almond base, often labeled “cultured cashew milk,” predicts softening and browning without stretch. Miyoko's Creamery, whose founder Miyoko Schinner popularized the cultured-nut approach, lists organic cultured cashew milk first on its spreads and cream cheeses, with sunflower or coconut oil added mainly for texture, per the company's own labels.
A base built mainly on water and vegetable gums (carrageenan, locust bean gum, xanthan gum) with little oil or starch predicts a product that goes glossy and slumps rather than flowing. These are usually the lowest-fat, lowest-cost shreds on the shelf, and they are the ones behind most complaints that a cheese simply will not melt.
Why dairy melts, and why plant cheese only imitates it
Dairy cheese melts because of what is happening to its protein, not just its fat. Casein, the main milk protein, sits in micelles held together partly by bridges of calcium and phosphate, and reducing that calcium bridging loosens the casein network, letting the fat phase liquefy inside it and the whole structure flow and, in mozzarella, stretch into strands. A 2023 review in the journal Molecules on calcium-sequestering salts in processed cheese describes how pulling calcium phosphate out of the casein micelle during manufacture increases hydration of the micelle and lets the cheese soften and flow at heat.
Vegan cheese has no casein network to loosen, so starch-based versions fake the effect a different way: heat gelatinizes the starch, turning it into a viscous matrix that flows the way melted fat and protein do together in dairy. A 2023 study in Food Hydrocolloids on the melting properties of vegan cheese found that the thermo-reversibility of these products was driven mainly by the starch component, not the fat. That gelatinization needs a higher, more sustained heat than dairy fat needs to liquefy, which is the real reason so many people say their vegan cheese “just won't melt.” It usually will. It needs more heat and more time than they gave it.

The technique fixes more complaints than the brand does
Shred it, don't slice it. A block sliced thick has less surface area exposed to heat, so a starch matrix at its center may never reach gelatinization temperature before the outside scorches. Pre-shredded or hand-grated cheese melts faster and more evenly because more of it touches heat at once.
Use higher heat than you would for dairy, and hold it there longer. Starch gelatinization is a threshold event: below the right temperature nothing happens, and above it the starch swells and flows. Dairy fat starts softening well below the boil; a starch-based cheese often needs closer to a full simmer's worth of heat sustained for a minute or two.
Cover the pan. Trapped steam adds moisture and heat to the top of the cheese, which matters most for grilled cheese and quesadillas where only one side sits directly on the heat source.
On pizza, add the cheese later in the bake than you would dairy mozzarella, and closer to a hotter zone of the oven if the oven has one. Adding it too early risks it drying out and going leathery before the crust finishes, since starch that gelatinizes and then overheats can seize back up rather than staying fluid.
Do not expect browning without help. Dairy cheese browns through the Maillard reaction between milk proteins and residual sugars. A coconut-oil-and-starch cheese has very little of either, so it will go glossy or slightly tacky at melting temperature but will not brown the way cheddar does under a broiler unless the formula includes added sugar or a protein source. A light broil at the very end can still color the surface, but it will not taste toasted the same way.
Troubleshooting: what your cheese is doing and why
Rubbery instead of melted usually means the starch gelatinized and then kept cooking past its peak. Once a starch matrix has fully swollen and gone fluid, more heat drives off water and lets the starch chains re-associate into a firmer, chewier gel, the same reversal that happens if you overcook a cornstarch-thickened sauce. The fix is heat and time in the right order: get the pan hot enough to trigger gelatinization, then pull the cheese off heat as soon as it flows rather than leaving it on the burner to hold.
A cheese that sits there and goes shiny is the water-and-gum failure mode described above. Gums like carrageenan and locust bean gum thicken a cold or lukewarm liquid on contact and hold that thickened state under heat, so instead of a phase change from solid to flowing liquid, you get a slow softening that never crosses into an actual melt. No amount of extra time fixes this, because the product was never built with a melting mechanism, only a thickening one. Check the label before you blame your stove.
A cheese that melts in the pan but seizes on a pizza is usually an oven-timing problem rather than a fault in the product. Cheese added at the start of a long bake dries out before the crust finishes, since a thin layer of starch-based cheese has little moisture reserve once its water content gelatinizes and then evaporates. Adding the shred in the back third of the bake, or under a broiler for the final minute, gives it less time to dry out after it flows.
An oily taste in place of a cheesy one is close to unavoidable with a coconut-oil-forward formula, because coconut oil has a distinct flavor and a low melting point around 78F, well below body temperature, so it can taste greasy rather than rich once it liquefies. Brands manage this with flavoring and salt, not by changing the fat, since the fat is what is doing the melting. If the oily edge bothers you consistently, that is a signal to try a soy-protein-based slice instead, which trades some melt for a firmer, less oil-forward bite.

Is the best-melting vegan cheese also the healthiest? No
This is a separate question from melt, and the honest answer works against the products people usually reach for. The cheeses that melt and stretch best are the ones highest in refined coconut oil, and coconut oil is roughly 80 to 90 percent saturated fat, with USDA data putting a single tablespoon at about 12 grams of saturated fat out of 14 grams of total fat. A serving of a good-melting shred built on that base typically carries several grams of saturated fat and close to zero grams of protein, because starch and oil do the melting work that protein cannot do in these formulas.
The cultured cashew and almond cheeses that melt worst tend to carry more actual nutrition: real fermentation cultures, a nut base that supplies some protein and unsaturated fat, and, per Miyoko's own labels, something like 1 to 3 grams of protein per 28 gram serving, still modest next to dairy cheese's roughly 6 to 7 grams per ounce, but higher than most shreds. None of this makes any vegan cheese a meaningful protein source on its own. Vegan does not mean healthy here any more than it does anywhere else. A shred that melts beautifully on pizza is, nutritionally, closer to flavored coconut fat and starch than to food built around protein. Whether that matters to you depends on how the rest of your plate looks that day.
