A one pound bag of Great Value dried lentils costs $1.92 at Walmart. A one pound package of Beyond Beef costs $8.35 at the same store, the same week, in August 2026. Both are vegan. That single fact is the whole argument, because everyone answering is vegan food expensive is quietly picturing one of these two carts and assuming it speaks for the other.
The honest answer splits down the middle and stays there. A vegan diet built from lentils, beans, rice, oats and tofu is one of the cheapest ways a person can eat, and the modelling to prove it exists. A vegan diet built from branded meat and dairy replicas is frequently more expensive than the animal products it stands in for, and the receipts prove that too. Neither claim cancels the other out, because they describe different shopping carts wearing the same label.
The rest of this guide is the math behind both halves, plus the part of the cost equation that has nothing to do with the price tag at all.
What the Oxford modelling actually found
In 2021, Marco Springmann of the Oxford Martin Programme on the Future of Food and colleagues modelled the cost of seven sustainable dietary patterns against the typical diet in 150 countries, using food prices from the World Bank's International Comparison Program. The results, published in The Lancet Planetary Health, found that in high-income countries a vegan diet reduced food costs by 21 to 34 percent, a vegetarian diet by 27 to 31 percent, and a flexitarian diet with modest amounts of meat and dairy by 14 percent. A pescatarian diet was the outlier, running up to 2 percent more expensive than the typical diet.
The mechanism is not exotic. The typical diet in a rich country spends a large share of its budget on meat and dairy, which are the priciest calories on the shelf per unit of nutrition once land, feed conversion and processing are priced in. A diet that replaces most of those calories with grains, legumes and vegetables spends less, because those foods sit closer to the farm gate with fewer conversion steps between field and plate.
The comparison that actually matters: cost per 100 grams of protein
Price per package hides more than it reveals, because a $3 tub of tofu and a $3 jar of peanut butter deliver very different amounts of protein per dollar. Cost per 100 grams of protein is the comparison that survives package size, brand and marketing, and it is the number that makes the case for whole foods look almost unfair.

Read down that list and a pattern appears that has nothing to do with whether a food is vegan. Whole legumes and peanut butter sit at the cheap end regardless of what they are compared against, chicken lands in the middle because commodity poultry is genuinely inexpensive, and every product that started as a whole food but got isolated, textured, pressed or extruded into something else costs several times more per gram of protein than the plant it came from. Tofu costs more per gram of protein than ground beef. That single line is the fact that upends the assumption that vegan automatically means cheap.
Why the alternatives cost more, mechanically
None of this is a pricing conspiracy. Turning a soybean into a burger patty adds a processing step that whole beans skip entirely: protein isolation. The standard industrial method, alkaline extraction and acid precipitation, mixes defatted soybean meal with water, raises the pH to dissolve the protein, spins out the solids, then drops the pH to the protein's isoelectric point so it precipitates back out as a purified solid of more than 90 percent protein. Published process reviews put the yield of that method at 24 to 38 percent, meaning a large share of the original bean's mass and protein is lost to the wastewater stream before the isolate ever reaches a factory that shapes it into a patty.
Scale compounds the yield loss. A commodity beef packing plant processes cattle by the thousand on lines built over a century of infrastructure investment, while the largest plant-based meat manufacturers run facilities that are, by comparison, boutique operations. Smaller runs mean less bargaining power on ingredients and a bigger fixed-cost share per unit sold. And the raw ingredients on each side of the aisle are not competing on a level field to begin with: the corn and soy grown at the largest scale in the United States are subsidized as commodity crops mostly destined for livestock feed, not as the specialty pea and soy isolates that go into a veggie burger, so the isolate supply chain gets none of the price support the feed supply chain gets.
Textured vegetable protein sits in the middle of the price table for a related reason: it skips full isolation but still needs extrusion under heat and pressure to give it a meat-like chew, an added mechanical step that whole beans and lentils never require. TVP itself carries an odd bit of food history: the generic term describes any extruded, defatted soy flour product, but TVP is a registered Archer Daniels Midland trademark, which is why every other brand on the shelf is legally required to call its version something else even when it is the same product.
The classic expensive item and its cheap functional replacement
Some of the biggest savings in a vegan grocery cart come from swapping not for a branded analogue but for the plain ingredient that does the same job in a recipe, at a fraction of the cost and none of the processing.

Equipment and access matter as much as time. A stockpot, a stove that can run for an hour, and refrigerator space to store cooked batches are not universal, and the USDA's Economic Research Service identifies low-income, low-access tracts, commonly called food deserts, using a threshold of a large share of residents living more than one mile from a supermarket in urban areas, or more than ten miles in rural ones. A household relying on a corner store with a shorter shelf life on fresh produce and no bulk dry-goods aisle is choosing between whatever is on the shelf that week, rather than between lentils and a Beyond Beef patty.
The hidden costs, and the one hidden saving that is smaller than people assume
Vitamin B12 supplementation is a real, recurring cost for anyone on a vegan diet, since the vitamin is produced by microorganisms and is reliably found in the diet only through animal products or fortification, not through plant foods themselves. It is also a small one. A 60 to 75 count bottle of 2,500 microgram quick-dissolve B12 tablets runs roughly $6 to $14 at Walmart as of August 2026, and the standard dosing pattern of one tablet a week stretches a single bottle past a year, putting the true annual cost at well under $15.
Fortified plant milk cuts the other way. Unsweetened soy milk runs about $8.20 per gallon-equivalent against $3.68 per gallon for conventional whole milk, according to USDA Agricultural Marketing Service retail price reporting from February 2026, a premium of more than 100 percent. Some of that gap reflects smaller production volumes and the added step of fortifying with calcium and B12 to match dairy's naturally occurring nutrients, but most plant milk drinkers are simply paying oat or soy commodity prices plus a specialty-aisle markup, since plant milk has not yet achieved anything close to dairy's decades of subsidized, vertically integrated supply chain.
Net these two against each other and the honest total is unglamorous: B12 costs a vegan household a few dollars a year, while a household that drinks a gallon of plant milk a week is paying an extra $240 or so annually for that one item alone. Whether that trade is worth it depends entirely on how much of the rest of the cart is dried lentils and how much is shelf after shelf of branded convenience.
So the answer is the diet you build, not the label on it
Vegan is a rule about ingredients, not a price point, and every number in this guide points at the same conclusion from a different angle. Springmann's modelling shows whole-food vegan eating undercutting the typical Western diet by roughly a quarter. The protein table shows a pound of lentils beating a pound of ground beef on cost per gram by a factor of five. And the swap table shows that most of the premium people pay for plant-based eating is a convenience fee for skipping a cooking step, not a tax on avoiding animal products.
The complication that keeps this from being a simple case of frugality winning out is that convenience is not a luxury for everyone reaching for it, and a diet that looks expensive from a spreadsheet can be the only realistic one for a household short on time, tools or a nearby grocery store. The fair version of the answer is that the ingredient list decides the price and the label never does, which is why vegan is cheap and vegan is expensive are both defensible depending on the basket.
