What happens when you go vegan, week by week

A physiological timeline of what actually changes when you stop eating animal products, organised by mechanism rather than by promise.

The gas is a fermentation problem with a name, and detox has nothing to do with it.

Human beings do not make alpha-galactosidase, the enzyme needed to break the bonds in raffinose and stachyose, the sugars that make up a large share of a bean's carbohydrate. Without that enzyme, the sugars pass through the small intestine untouched and arrive whole in the colon, where resident bacteria do to them exactly what bacteria do to any sugar they can reach: ferment it, producing hydrogen, carbon dioxide, and in some people methane. That is the entire mechanism behind the bloating that hits people in their first two or three weeks of eating more beans, lentils, and cruciferous vegetables. Nothing is being flushed out and nothing was toxic to begin with; a food that used to make up a small share of the plate now makes up a large one, and the fermentation load rises with it.

The scale of the shift is real even if the word detox is not. Adults on a vegan diet average 41 to 46 grams of fibre a day, against 12 to 18 grams on the typical American diet, according to intake data collected in the Adventist Health Study-2 and separate national surveys. That is often a doubling or more inside a single week, and a gut microbiome built around a lower-fibre diet needs time to reallocate itself toward the bacteria that thrive on it. A 2019 dietary intervention published in mBio found compositional shifts in fermentative bacteria within two weeks of a fibre increase, with the degree of change tracking how much fibre went up, not a fixed calendar.

This is also why the standard advice, ramp up gradually, actually works: it is not folk wisdom, it is giving the microbial population time to catch up to the substrate load rather than hitting it all at once. Soaking dried beans for twelve hours and discarding the soaking water removes a meaningful share of the offending sugars before they ever reach a pot: one commonly cited food-science study measured raffinose reduced by around a quarter and stachyose by a similar amount when the soak water was discarded rather than cooked into the beans, with longer soaks and a subsequent boil removing considerably more. Rinsing canned beans under running water for a minute strips more of the surface sugars than most people bother to do. And the enzyme sold over the counter as a gas remedy is not a mystery ingredient: it is alpha-galactosidase itself, harvested from the mold Aspergillus niger and dosed before the meal so it can do in the small intestine what the human gut cannot.

The first week: less food energy, not less food

Plant foods carry less energy per gram than the meat, cheese, and eggs they typically replace, largely because they carry more water and fibre and far less fat. A trial led by Hana Kahleova of the Physicians Committee for Responsible Medicine, an organisation that advocates plant-based diets, published in JAMA Network Open in August 2026, put adults with overweight on an ad libitum low-fat vegan diet for sixteen weeks with no calorie targets at all. Participants ate roughly the same weight of food as before, but the energy density of that food fell by nearly 30 percent, and average intake dropped by about 357 calories a day as a direct result, not because anyone was told to eat less.

That calorie drop is the most common, least discussed cause of the fatigue some people report in week one. It is rarely the diet itself doing something metabolically strange; it is simply a faster-than-planned calorie deficit landing on a body that has not yet adjusted its portions upward to compensate for the lower energy density of the new plate. The honest complication is that this fatigue is avoidable and mostly self-inflicted: eating enough volume of starchy staples, nuts, and oils to match prior calorie intake resolves it for most people within days, but a lot of new vegans, primed to expect the diet to feel virtuous and light, under-eat instead.

Satiety in that first week is doing real work too. Fibre slows gastric emptying and blunts the speed of the blood sugar rise after a meal, both of which extend the feeling of fullness relative to a lower-fibre meal of equivalent calories. That is a mechanical effect of fibre's bulk and viscosity, not a claim about willpower, and it is one reason the energy deficit above tends to arrive without anyone feeling deprived.

The first month: blood lipids move faster than almost anything else

Of everything on this page, cholesterol change is the fastest and best documented. A 2023 meta-analysis by Koch, Kjeldsen and Frikke-Schmidt, published in the European Heart Journal and pooling 30 randomized trials conducted between 1982 and 2022, found LDL cholesterol running about 0.3 mmol/L (roughly 11 mg/dL) lower on vegetarian or vegan diets than on omnivorous ones, a reduction on the order of 10 percent. Individual trials have shown movement within weeks: a randomized crossover trial comparing a low-fat vegan diet to a Mediterranean diet recorded LDL differences inside a 16-week window. The mechanism is displacement rather than mystery: saturated fat and dietary cholesterol, concentrated in meat, dairy fat, and egg yolks, are the primary dietary levers on LDL, and removing them removes the input rather than requiring the body to do anything unusual.

Three to six months: the slow-moving nutrients come due

B12 is the one item on this list that a body cannot self-correct by eating more plants, because no plant food reliably contains it. The liver stores between roughly 2,000 and 4,000 micrograms, enough, the U.S. National Academies' Dietary Reference Intake report notes, to cover three to five years of zero intake before deficiency symptoms typically surface. That reserve is not good news for a new vegan; it is a trap. It means a person can go a long time doing everything else right while running an invisible deficit, because the symptoms, fatigue, tingling in the hands and feet, memory trouble, do not announce themselves until the reserve is largely spent, and by the time anemia shows up on a blood test, nerve involvement can already be underway.

Iron works on a similar but shorter clock. Ferritin, the storage form of iron, generally takes three to six months of adequate intake to rebuild once depleted, even though a resulting anemia's more visible marker, hemoglobin, can start improving within about four weeks. Plant iron is entirely the non-heme form, absorbed at a lower and more variable rate than the heme iron in meat, which is why the evidence page on iron recommends pairing iron-rich plant foods with a source of vitamin C and separating them from tea or coffee, whose tannins bind the mineral.

Iodine is the nutrient most new vegans have never been told to think about, because the foods that carry it, dairy and seafood, are not obviously calorie sources the way meat is. A 2023 market survey of plant-based milks sold in the United Kingdom found unfortified versions carrying a median of only about 0.007 milligrams of iodine per kilogram, a small fraction of dairy milk's content, and only 3 of the 47 products tested were fortified with it at all. Someone who swaps dairy milk for an unfortified plant milk without otherwise adjusting their diet can lose a meaningful share of their iodine intake in the switch. Iodized salt, seaweed used in moderation, or a fortified plant milk closes the gap; the workaround costs nothing beyond checking a label.

Weight loss, honestly

Many people going vegan lose weight, and the 2026 Kahleova trial above is a reasonably clean demonstration of why: energy density falls when animal fats and processed dairy give way to vegetables, legumes, and whole grains, and that fall in calories per gram drove the weight loss more directly than any change in appetite or willpower. An earlier trial by Neal Barnard, who directs the same advocacy organisation, assigned 64 overweight postmenopausal women to a low-fat vegan diet or a control diet and recorded 5.8 kilograms lost against 3.8 kilograms in the comparison group over 14 weeks, consistent with the same mechanism.

The honest complication is that this outcome depends entirely on what fills the plate. A diet built on oil-fried plant foods, vegan cheese, and meat analogues, many of which are formulated to hit a similar fat and calorie density to the animal product they replace, does not carry the energy-density advantage that produced weight loss in these trials, and plenty of people who go vegan on convenience foods gain weight or stay flat. What is genuinely individual, and what is a myth doing the rounds

Energy levels, athletic performance, and skin are the three claims that circulate hardest online and rest on the thinnest individual-level evidence. A 2023 review of vegan diets in dermatology found no well-designed randomized trials isolating veganism itself as a cause of clearer or worse skin, separate from its overlap with a lower-glycemic, dairy-free diet, both of which have their own smaller and mixed evidence base for acne. Some people report clearer skin after cutting dairy specifically; others notice nothing; a vegan diet heavy on refined carbohydrates could plausibly work against that same mechanism. None of this is dishonest marketing so much as genuinely unsettled science, and a guide that promised glowing skin would be promising something the research does not support.

Energy and athletic performance follow the same pattern: the evidence on vegan athletes finds performance outcomes depend on whether total calories, protein, iron, and creatine are matched, not on the animal-versus-plant label itself, and individual response to any of it varies enormously by baseline diet, training load, and how well the transition is managed nutritionally.

When to see a doctor rather than self-diagnose

Persistent fatigue, tingling or numbness in the hands or feet, unexplained weight loss, or digestive symptoms that do not settle after a month of gradual fibre increases are all reasonable reasons to get blood work rather than adjusting the diet further and hoping. B12, ferritin, and a basic metabolic panel are inexpensive and specific; guessing which nutrient is short from symptoms alone is unreliable because the early symptoms of B12, iron, and iodine shortfalls overlap heavily.
