Vegan butter and baking fats: the fat and water math behind every swap

Butter is a precise ratio of fat, water and milk solids, and every plant substitute fails or succeeds depending on exactly which fraction it gets wrong.

The fat and water math that explains everything else

US federal standard sets butter at not less than 80 percent milkfat, with a maximum of 16 percent water and 2 percent milk solids, and European-style butters push fat to 82 percent or higher by cutting the water further. Every difference between a good substitute and a bad one traces back to which side of that ratio it changes. More fat and less water gives a firmer, more workable dough. Less fat and more water gives a wetter dough that spreads, steams and toughens. The single most useful habit this guide can teach is to stop reading a tub's front label and read its nutrition panel instead: multiply grams of fat per serving by the number of servings that make up 100g of the product, or more simply, look for a fat gram count per tablespoon of 11g or higher, which is roughly the 80 percent line. A vegan spread that lists 7 or 8 grams of fat per tablespoon is running closer to 60 percent fat, and it will not behave like butter no matter what the front of the tub says.

Plasticity: the property no one names but every croissant depends on

Plasticity is a fat's ability to stay firm but pliable across a range of temperatures rather than snapping from solid to liquid. Butter has it because milkfat is a mix of triglycerides with different melting points, so at any given kitchen temperature some of the fat is crystallized and some is soft, and the two coexist in a workable paste. That mix is exactly what lets butter get pounded into a thin, continuous sheet for a croissant or puff pastry without the sheet tearing or the fat melting out through the dough.

Commercial vegan block butters solve the plasticity problem the way margarine always has: by blending fats with different melting points rather than relying on one. A typical block combines a hard fraction, usually coconut or palm oil, with a soft one, often shea butter or a liquid oil like rapeseed or sunflower, so the blend crystallizes across a range instead of at one sharp point. Can you use margarine instead of butter

That extra water is not a minor variance. In laminated or rolled doughs the effect is worse: the added water hydrates flour's gluten proteins more than a high-fat dough would, and more gluten development means a tougher, chewier crust instead of a tender, flaky one. Is vegan butter the healthier choice

Not automatically, and often not at all. Salted dairy butter carries about 51.4g of saturated fat per 100g according to USDA FoodData Central, and many vegan butters land close to that figure or higher, because the coconut and palm oil used to build solid structure are themselves more saturated than butterfat: coconut oil runs close to 90 percent saturated fat, well above butter's roughly two-thirds share. Swapping dairy butter for a coconut-oil-heavy vegan block for the sake of health, without changing anything else about the recipe, does not lower saturated fat intake and can raise it.

The genuinely healthier move, where a recipe tolerates it, is not a different solid fat at all but a liquid oil, since canola, sunflower or olive oil replace saturated fat with unsaturated fat directly rather than trading one saturated source for another.
