Honey is doing three jobs, not one
Sweetness is the obvious one, but honey also sets a recipe's moisture level and its browning speed, and both matter as much as how sweet it tastes. Honey is a concentrated syrup; the international Codex honey standard caps its water content at 20 percent, and most commercial honey runs at or below that ceiling, drier than most of its plant replacements. It's also unusually high in fructose, the sugar that caramelizes at a lower temperature than glucose does, which is the real reason honey-sweetened baked goods brown fast. A good substitute matches honey on whichever of the three actually matters for the recipe in front of you, not just on the sweetness label.

Water is the reason a straight swap sometimes fails
Honey's water content, capped at 20 percent by the international Codex standard, makes it more concentrated than most of its replacements. Maple syrup, by the federal grading standard, has to run at least 66 percent solids by weight, which puts it at roughly a third water, a bit wetter than honey but close enough that most recipes don't need any adjustment. Agave and corn-based syrups run thinner still. When a substitute is noticeably wetter than the honey it's replacing, some bakers pull back another liquid in the recipe by a tablespoon or two to keep the batter from turning soupy; going the other direction, back to honey, rarely needs the same correction.
Browning is a fructose story
Fructose caramelizes around 230°F, well below glucose's roughly 320°F, and honey's fructose share is high enough that honey-based bakes brown quickly, often looking done on the outside well before the center is cooked through. Agave pushes that further: blue agave syrup commonly runs 70 to 90 percent fructose, higher than honey's share, and it browns faster still. The standard fix when swapping agave in for honey is dropping the oven temperature by about 25°F and watching the bake rather than trusting the timer alone. Maple syrup, by contrast, leans on sucrose rather than fructose as its main sugar, so it browns closer to the way table sugar does, one more reason it's the more forgiving 1:1 swap.
The sweetness math, so you're not guessing
Blue agave syrup's fructose share, commonly 70 to 90 percent of its sugars, runs well above honey's, and fructose is the sweetest of the common sugars gram for gram, which is why agave reads sweeter than honey in practice; most cooks use a bit less agave by volume than the honey called for, then taste and adjust from there. Brown rice syrup runs the other way: it's built mostly from maltose rather than fructose or glucose, which reads as noticeably less sweet, so a recipe leaning on it for sweetness alone tends to fall flat unless it's paired with another sugar alongside it.
